Written mentions about the baker's trade in Bautzen can already be found in the Middle Ages: in the 'law book's is the baker's trade one of the most important trades.
During the Middle Ages, craftsmen were organised in guilds, one suspects that probably one of the earliest guilds, union or fraternities of bakers existed in Bautzen.
The sale of baked goods was in these times strictly regulated. There were these so-called 'bread banks'; these roofed stalls offered protection from wind and weather for delicate goods. The baker masters could rent one table from the town for an annual rate. The bread banks in Bautzen were until 1883 inside the town hall, next to the Küchelbankgässchen.

Only in the 16th century are trails of the Bautzen baker's trade found again. Whether the baker's guild had stopped functioning or records were destroyed is not known. 
A certificated from the year 1555 indicates that a bakers' and pastry makers' guild already existed. The in 1578 issued statue controlled the whole guild life for 100 years:
apprenticeship, travelling, journeyman and master pieces, punishment as well as the actual baking.

With the introduction of the industrialisation in the 19th century the demise of the guilds also started.
The 'law of economic freedom' from the 15.10.1861 didn't dissolve the guilds but from now on everybody was allowed to bake and sell bread. The guild-law became less important. The bread banks were closed in 1862; it was now possible to sell bread everywhere and wasn't subject to control and influence for the baker masters.
The Bautzen bakers decided in 1862 to continue the 'Vereinigte Innung der Weißbäcker und Süßküchler' (United guild for bakers of white bread and pastry bakers) as commercial co-operation to safeguard the bakers' interests.

1898 organised as compulsory guild.
1884 guild founded its own health insurance.

Today ca. 38 guild enterprises supply their customers with fresh and tasty baked goods of outstanding quality in the district Bautzen.
